Soft and Thin Snickerdoodles

Ok everyone, these snickerdoodles honestly changed my life. They are moist, buttery and have the perfect amount of cinnamon and sugar. I made them for my friend's baby shower and they were a big hit (as were my favorite chocolate chip cookies.)
If you want a simple and delicious cookie recipe to try, this is it. You will not be disappointed.

Soft and Thin Snickerdoodles
2-1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup (2 sticks) butter, softened
1-1/2 cups sugar
 2 large eggs
1/2 cup sugar
1 tsp. cinnamon

1. Preheat oven to 350 degrees.
2. Sift together flour, baking powder, and salt; set aside.
3. Cream together butter and sugar. {If you're doing this by hand, cream until pale and fluffy. If you're using a mixer, mix for about 3 minutes.)
4. Mix in eggs until well combined.
5. Gradually mix in flour until dough forms.
6. In a separate, small bowl, combine sugar and cinnamon together.
7. Shape dough into about 1-3/4 inch balls.
8. Roll balls in cinnamon sugar.
9. Space about 3 inches apart on ungreased baking sheet lined with parchment paper.
10. Bake for 9-10 minutes. Enjoy!
